2,300kg cooked McCain Chef Solutions Simply Mash
300g Cheddar, grated
150g Smoked Applewood Cheddar, grated
4 Eggs
250g Steamed Spinach, drained and chopped
8g Garlic Granules
6g Salt
5g Paprika

Seasoned Plain Flour, Paprika, Salt

Breadcrumbs
Cook Simply Mash following on pack instructions.
Whilst the mash is steaming steam the spinach too for 2 minutes.
Remove spinach and chop finely.
Place cheese, spinach, eggs and seasonings in a large mixing bowl and add the warm mashed potato.
Combine all ingredients evenly.
Weigh out desired portions and shape into croquettes.
Pass through seasoned flour, egg and breadcrumbs.
Place in fridge and allow to firm up.
Cook on a greaseproof lined baking sheet in a preheated oven until golden and a sufficient core temperature is achieved (>75°C).

Serve with a red pepper dipping sauce and salad
